Spinach- parboiled, cooled and squeeze water out using sushi roll bamboo mat.
GOMAE-
Use a mortar and pestle, or food processor to blend together:
Sesame - 4 TBS
Sugar - about 1/2 tsp
Salt - about 1/4 tsp or less
Katsuo - tuna fish shavings
Once blended, add a little soy sauce over the top.
